Here is a simple, delicious and ultra nutritious soup that makes it easy to get in tons of veggies….
1 small head of broccoli
1 zucchini = 2 cups when chopped
2 celery stalks = 1/2 cup when chopped
1/2 small red/yellow pepper, diced up
1 small avocado
1/3 cup pine nuts (optional)
1 tsp oregano (optional)
1/4 cup cilantro or parsley (optional)
1/2 tbs butter
1 cup water
Cut the broccoli into small pieces and gently steam.Once steamed, take out and dump the water. Place butter in the warm pot.
Blend the broccoli, zucchini, celery and water until smooth. Slowly add avocado. You can also add parsley or cilantro if you choose. You may need to add more water.
Once blended, place in the pot that was used to steam…and gently warm with butter – DO NOT COOK!
Add Celtic Sea salt to taste.
You can sprinkle pine nuts, peppers, oregano or dulse (your choice) and serve warm.
